This honey is a concentrate from all the wildflowers that were flowering in Sicily last spring-summer. The honey generally has caramel tones and sometimes a thyme finish, depending on the years. It is very satisfying over oatmeal or in spicy teas. It has more complexity than the previous honey varieties but is not yet as balsamic as the varieties to come. In Italian restaurants, a tiny ramequin often is found in the center of the cheese plate, which guests can pair with the different cheeses on offer.
